Key Compliance Dates and Record Retention Periods 

The compliance date for all covered entities, including RFEs and restaurants, is January 20, 2026

Regarding how long you must keep records: 

  • Standard Rule: In most cases, records must be maintained for 2 years from the date you created or obtained them. 
  • Exception (Farm Purchases): Records for food purchased directly from a farm by an RFE or restaurant only need to be maintained for 180 days
